cheer cheers

Today for lunch Holden had his favorite- "cheer cheers." It's not NOT healthy, but I'd rather it stay a breakfast or a snack thing. Guess I have bigger battles to pick, right? :) And just look at that sweet face. He calls them his "special cheer cheers." They're the multi-grain kind with a hint of sweetness. Who can blame him for wanting them at nearly every meal?


I feel like I made a successful dinner tonight. The past several times we've been to the library, I've picked up a few cookbooks to liven things up in the kitchen. One I checked out is "Weight Watchers: New Complete Cookbook" so it's really healthy, plus, there's over 500 recipes. Tonight I made:

Southern Oven "Fried" Chicken:
(And for those of you who do WW, it's 5 points. I don't, so I'm not really familiar with the whole points thing.)

1/2 cup fat-free buttermilk
1/2 cup cornflakes, crushed (I used whole wheat breadcrumbs and don't think I'll try it with cornflakes- plus it was easier and faster than crushing them up).
3 Tbs. all-purpose flour (I used whole wheat flour).
1/4 tsp. salt
1/4 tsp. freshly ground pepper
2 lbs. chicken breasts
4 tsp. canola oil

1. Preheat oven to 400; spray a large baking sheet with nonstick cooking spray (I just used a glass pyrex).
2. Pour buttermilk into a large shallow bowl. In a pie plate, combine cornflake or breadcrumbs, flour, salt, & pepper. Dip chicken in buttermilk, then dredge in the crumbs, coating completely. Place the chicken on the baking sheet/pyrex; drizzle with the oil.
3. Bake for 30 minutes, then turn the chicken over. Bake until cooked through, 15-20 minutes longer.

Yum!
