This week I'm trying out all new recipes, as well as using new veggie and fruit purees, that I mentioned in my last entry. I'm pretty excited. Here's a new casserole I tried the other night:
1 lb. ground beef
6 slices turkey bacon
1 large chopped onion
1 green bell pepper; seeded & chopped
1 Tbs. white vinegar
1 Tbs. prepared mustard
1/2 cup tomato ketchup
1 Tbs. packed brown sugar
2 cups kidney beans, drained (1 can)
2 cups black beans, drained (1 can)
1 can whole corn, drained
* 1/4 cup squash puree*
2 cups shredded mild cheddar cheese
1 cup crushed tortilla chips (I used baked)
In a large skillet over medium high heat, brown the beef, bacon, onion, & bell pepper together until beef is cooked. Drain. Transfer mixture to a 3 qt. casserold dish (sprayed). Add the vinegar, mustard, ketchup, sugar, beans, corn, squash puree, & stir to blend well.
Bake uncovered at 375 for 30-40 minutes, or until bubbly. Remore & spread cheese and chips evenly over the top. Return to oven and bake until cheese is melted. Serves 6.
Would be great with corn bread!
