Peach Cobbler Awesomeness


I made my very first from scratch peach cobbler this past weekend. It was sooo good! Notice the "was"...we ate the last of the cobbler today. It was a little sad.

I made my Grandmother's recipe and added a little bit here and there, something I know she would appreciate, since she's always doing that herself. Because of Fount's allergy, I decided to make a gluten-free crust, so I used a special flour this time around. He was so excited to eat the same dessert as us. The flour was a little difficult to work with, but totally worth it, for my baby!

My Grandmother's crust recipe. It's just perfect!

Recipe:
  • Preheat oven to 425 degrees
  • Slice 4 peaches (I added more) and soak in 1- 1 1/2 cups sugar (depending on the sweetness of the peaches) & add cinnamon to taste.
  • Allow peaches to soak while you make your crust.
  • Add 1/4 cup or more of water, depending on the juiciness of the peaches.
  • Add 3 cups flour, so it makes just over double the normal recipe.
  • Place crust on the bottom of your pyrex.
  • Pour in peaches ontop of the crust.
  • Add top layer of crust
  • Sprinkle with sugar.
  • Turn oven down to 400 degrees and let cook for about 45 minutes.
  • Serve warm and add vanilla ice cream.
