Goldfish Chicken Nuggets


My aunt gave me this recipe years ago and it's wonderful! In fact, I don't make it enough. The ingredients it calls for are things that you normally have in your pantry, especially if you have a toddler. They're always craving Goldfish.

2 Chicken Breasts, cut into bite size 1 inch cubes
1 pkg. Goldfish (crunch up tiny; I use the wheat kind. You can let your little one stomp on them in a ziplock).
1/3 cup ground almonds (optional, but they're wonderful in it)
1/3 cup fresh, grated parmesan cheese
1/4 tsp. Italian seasoning

1 egg

Dip chicken in egg, then into mixture.

Bake on a cookie sheet with edges or a 13x9 casserole dish
Melt 1/4 stick of butter & put in dish
Bake at 350 for 25-30 minutes

Served with ketchup or bbq sauce (Stubb's bbq sauce is the best)

Speaking of Stubb's...My heart holds a special place for this spot. Tim and I've been to countless concerts there and have devoured pounds of bbq there. I hope to enjoy it again someday!
